"맛이 아주 깊어. 안 보면 보고 싶은 고향처럼, 안 먹으면 먹고 싶어. 어디다 내놔도 손색이 없지."
"일반 막걸리와는 무엇이 달라요?"
"여느 막걸리와는 달리 땡겨. 사람을 끌어당긴다니까. 개도막걸리에 한번 입맛을 들인 사람은 그 유혹에서 벗어나지 못하지."

It is the water that is the answer to Gaedomakgeolli.)개도막걸리는 천제봉에서 내려온 물로 만들어져. 천제봉 물은 일급수로 음료로도 가능할 정도로 깨끗해. 이 물맛이 더해져 개도막걸리 맛이 나온다는 거야. 아무리 재료가 좋다고 해도 물맛이 좋지 않으면 막걸리도 맛이 없다는 말이 맞는 것 같아.

In a word, nowadays this trend is being reversed from fast food to slow food.)그런데 뜬금없이 김치 이야기, 막걸리 이야기 하다 말고 웬 '슬로푸드' 이야기를 하느냐고? 김치와 막걸리가 바로 슬로푸드이거든. 다시 말해 김치도 그렇고 막걸리도 그렇고, 둘 다 발효 식품의 대명사잖아.
(Well, why do I suddenly say slow food? Because the Kimchi and Makgeolli are slow foods. In other words, they are famous for fermented food.)발효 식품이란 젖산균이나 효모 등의 미생물의 발효 작용을 이용해 숙성시켜 만든 식품이야. 서양에서는 요구르트나 치즈 등이 있다고 들었어. 그리고 우리나라에서는 된장, 고추장, 간장, 청국장, 젓갈 등 우리 음식의 대부분이 발효 식품이지. 김치와 막걸리도 마찬가지고.
(The fermented food is a food which has been matured using zymolysis of microorganism of lactic acid bacterium and yeast. In the west, there are yogurts or cheese and others. And in Korea, most of Korean food like Doenjang, Gochujang, Soy sauce, Cheonggukjang and Salted fish are the fermented food. Kimchi and Makgeolli is also same.)
